Sweet potatoes are so easily available, they are inexpensive, and also very delicious. Not to forget the amazing health benefits – they provide vitamins, iron and magnesium. Sweet potatoes are known as Shakarkandi in Hindi.
Ditch the potatoes for this nutritious alternative. Kids love these too, pack them in their lunch or enjoy as an afternoon snack.
I also like to use my small toast-r-oven for such sides, which is quick to heat up and reduces the overall preparation time.
Roasted Sweet Potatoes
- Preheat oven to 400°F.
- Line a baking sheet with aluminum foil, drizzle with 2 tablespoons of the oil, sprinkle salt, and toss to coat evenly, then spread in a single layer.
- Roast in oven for about 10 minutes until lightly browned on one side. Turn them and roast for another 10 minutes.
- Sprinkle with pepper and enjoy this nutritious snack.
