Main Ingredients

Boiled Eggs

Avocado

Greek Yogurt

Bread

Jalapeno

Red Onion

Step 1

In a large bowl, add avocado and mash with a fork. Then add greek yogurt, red onion, jalapeno (if using), parsley, lemon juice, salt & pepper. Mix all well.

Chop the eggs coarsely and add to the bowl, folding them in gently until combined. Avocado Egg Salad is ready.

Step 2

Add some arugular or spinach leaves on  a slice of bread. You can also enjoy egg salad topped on lettuce leaves.

Step 3

Spread the egg salad on top. Enjoy as an  open faced sandwich. You can also enjoy egg salad topped on lettuce leaves.

Step 4

Top with another slice of bread. And it's ready!
