Step 1

Combine all ingredients for the marinade in a bowl and mix well. Let it rest for 30 minutes.

Thread the potatoes, peppers, and onions on the skewers. Lightly brush skewers with oil.

Step 2

Set to 400°F and cook for 8 minutes. Turn the skewers and cook until lightly charred about 6 minutes more.

Step 3
