Air Fryer Zucchini is a quick, simple, and wholesome side dish that requires no breading. The basic spices combination adds a lot of flavor to the zucchini. This recipe is vegan, gluten-free, low-carb, and keto-friendly.
Trim the edges of zucchini. Then cut into quarters lengthwise. Then lay the quarters flat side down and cut into equal size pieces. (Note: You can do other shapes such as round or semi-circle as well. Time varies depending on the size)
Transfer to a large bowl. Add olive oil, garlic powder, italian seasoning, freshly ground black pepper, and salt.
Toss to coat the zucchini with the oil and spices.
Air Fryer Method
Preheat air fryer to 400°F. Transfer seasoned zucchini to the air fryer basket. Air fry at 390F for 7-9 minutes till it looks nicely roasted and is cooked. Shake once in between at about 5 minutes.
Transfer to a serving plate, and enjoy the healthy side dish.
Oven Method
Preheat the oven to 425°F and transfer the seasoned zucchini to a baking sheet.
Roast for 15 to 20 minutes, or until zucchini is golden brown around the edges.

Storing: You can refrigerate cooked zucchini in an airtight container in the refrigerator for up to 3 days. It is best not to freeze zucchini as it will get mushy. Reheating: To reheat, air fry for 2-3 minutes at 350°F.
