Instructions
Preheat the air fryer to 380°F (190°C).
To a large bowl, add the sliced bell peppers and onions. Add 1 tablespoon of olive oil and 1 tablespoon of fajita seasoning.
Transfer the onions and peppers to the air fryer basket and cook for 3 minutes at 380°F.
Meanwhile, add shrimp to the bowl and pat dry with a paper towel. Season with the remaining olive oil and fajita seasoning.
When the 3 minutes are up, make space in the center of the fajita veggies in the air fryer basket. Add the seasoned shrimp to the center.
Air fry for 6 minutes at 380°F, flipping halfway through. Remove from the air fryer basket and serve immediately.
Assemble the fajitas over tortillas. Heat the tortilla and spread some avocado cilantro sauce. Top with shrimp fajitas, sprinkle some lime juice, and enjoy!

Shrimp: I used raw, thawed shrimp (uncooked and deveined). You can use tails on or off. The one-pound pack had about 20-24 shrimp. Leftovers: You can store these shrimp fajitas in the refrigerator for up to 3 days in an airtight container. To reheat, warm gently in the air fryer for 2–3 minutes or in a skillet over medium heat until heated through.
