I love to air fry these fajita veggies and have them ready for quick meals. They are an easy veggie addition to any meal. I even like to cut the peppers and onions smaller sometimes and add the charred veggies to my omelet.

Ingredients 

  • 3 Bell Peppers, seeded and cut lengthwise into 1/2-inch slices; I used one each of red, yellow, and green bell peppers.
  • 1 Red onion, peeled and cut lengthwise into 1/2-inch slices
  • 1 1/2 tablespoons Extra virgin olive oil
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Garlic powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Paprika
  • 1/4 teaspoon Black Pepper, freshly crushed
  • 1/2 teaspoon Oregano
  • 1/2 Lime, juiced
  • Cilantro leaves, for garnish

Instructions 

  • Preheat the air fryer to 380°F.
  • Add the pepper and onion slices to a large bowl and add the oil, salt, garlic, cumin, paprika, black pepper and oregano. Toss until well combined.
  • Place the peppers and onions in the air fryer basket in a single layer as much as possible and air fry at 380°F for 8-10 minutes or until fork tender and beginning to char.
  • Remove the basket at the mid-way point and shake or stir the peppers and onions to ensure they cook evenly.
  • Add a sprinkle of lime juice. You can also garnish with some cilantro leaves. Serve immediately.
