What are Fingerling Potatoes?
They are a type of small potato typically harvested when they are still young. Their waxy texture makes them perfect for roasting or frying. Their small size also allows them to cook quickly and evenly in the air fryer.
They are usually sold in a bag with yellow-colored fingerling potatoes. But during fall or the holiday season, you might find multi-colored fingerling potatoes. You can use any in this recipe.
Ingredients

- Fingerling potatoes: I use small, thin-skinned potatoes because they cook quickly and have a naturally creamy texture. You can use the yellow-colored or the multi-colored fingerling potatoes. If you don’t have fingerling potatoes, baby potatoes or Yukon Golds cut into wedges work well too.
- Oil: Helps crisp up the potatoes while adding a rich, buttery flavor. I used olive oil, but any neutral oil, such as avocado oil, is another great option.
- Garlic: I added freshly minced garlic for the robust flavor. You can replace it with 1/2 teaspoon of garlic powder if you prefer.
- Seasoning: I added salt, freshly ground black pepper, Italian seasoning, and paprika. You can substitute with fresh thyme or rosemary if you like. Paprika is optional.
- Grated Parmesan (optional): I used freshly grated parmesan cheese. It adds a savory, crisped, cheesy texture after air frying. Leave out cheese to keep these potatoes vegan.
- Parsley: Topping with herbs gives color and a hint of brightness to the final dish.
How to Cook Fingerling Potatoes in the Air Fryer?
This here is my favorite way to roast potatoes. It is fast, easy and hassle-free with 4 simple steps.
Prep the Potatoes
Preheat your air fryer to 400°F.
Rinse and dry the fingerling potatoes. Trim off any blemishes, but do not peel them.
Cut the potatoes in half lengthwise. Make sure the potatoes are all evenly sized after cutting so they will all cook well in the same cooking time in the air fryer.

Season the Potatoes
Toss the potatoes with olive oil, garlic, salt, Italian seasoning, black pepper, and paprika in a large bowl. Mix well to coat evenly.

Air Fry the Potatoes
Arrange the potatoes in a single layer in the air fryer basket to ensure even cooking.

Cook for 12-15 minutes, shaking the basket halfway through.
In the last 5 minutes of cooking, sprinkle Parmesan cheese on top (if using).

Garnish & Serve
Remove from the air fryer and transfer to a serving plate. Top with chopped parsley and additional Parmesan if desired.

Make sure to dry the potatoes: After washing and scrubbing the potatoes, don’t skip this step. Use a kitchen towel to dry the potatoes thoroughly. Wet potatoes will not allow the oil and seasoning to stick, so they won’t crisp well.
Don’t skip the oil: Many people say that the point of using an air fryer is to skip oil, but I don’t recommend doing that if you like crispy potatoes.
Cook in a single layer: For even cooking, it is important not to overcrowd the basket and cook the potatoes in a single layer. Cook in batches if needed. Flip halfway through to ensure even crispiness.
