If you love tacos but don’t love watching the stove on a busy evening, these Air Fryer Shrimp Fajita Tacos are about to become your new favorite dinner. They’re quick, colorful, and packed with tender shrimp, and perfectly cooked peppers and onions — all ready in just 20 minutes.

If you have been following me for some time, you know that I am a big fan of the air fryer. They are perfect for cooking veggies and meat in a fraction of the time it takes in the oven or on the stovetop.

Today, I am sharing this air fryer shrimp fajitas recipe, which comes together in less than 20 minutes and is so flavorful.

The air fryer does all the heavy lifting here. Shrimp cook incredibly fast in the air fryer, making them ideal for nights when everyone is hungry now. The shrimp turn juicy and lightly charred at the edges, while the peppers and onions soften beautifully without getting soggy.

Tucked into warm tortillas and topped with your favorite fixings, these tacos are simple, satisfying, and always a hit.

Recipe Tips

Shrimp: Use raw, thawed, deveined shrimp. I like to use wild-caught jumbo shrimp. I prefer shrimp with the tail off, but tail-on shrimp works too. Make sure to pat it dry with a paper towel before adding the seasoning.

Frozen Shrimp: You can use frozen shrimp in this recipe. Just thaw completely, and pat dry before seasoning.

Cooking twice: Since bell peppers and onions take longer to cook than shrimp, we first cook the fajita for 3 minutes, then add the shrimp and cook them all together.

Spread evenly: Try to spread the ingredients in a single layer in the air fryer, so they all cook evenly.

Storing: You can store these shrimp fajitas for up to 3 days in the refrigerator in an airtight container. To reheat, warm gently in the air fryer for 2–3 minutes or in a skillet over medium heat until heated through.

Shrimp Fajita Tacos

Of course, you can enjoy the shrimp fajita as is. We love to serve them as tacos. Heat up some tortillas and slather with my avocado cilantro sauce. Then add in some fajitas and the shrimp. Top it with some more sauce or pineapple mango salsa and a sprinkle of lime juice, and enjoy.

Make it a shrimp taco bowl by serving this shrimp fajita over Spanish rice or greens. Add some Mexican black beans, guacamole or chopped avocado, roasted corn, and salsa. Garnish with some chopped cilantro and top with garlic yogurt sauce, and enjoy!

Air Fryer Shrimp Fajita Tacos (10 Minutes)

Ingredients 

  • 1 pound Raw shrimp , thawed
  • 1/2 Red Bell Pepper, sliced
  • 1/2 Green Bell Pepper, sliced
  • 1/2 Yellow onion , sliced
  • 1 tablespoon Olive Oil , divided
  • 2 tablespoon Fajita seasoning , divided, adjust to taste

For serving

  • 8 Tortillas, mini taco sized
  • Avocado Cilantro Sauce
  • Lime slices
  • Cilantro , for garish

Instructions 

  • Preheat the air fryer to 380°F (190°C).
  • To a large bowl, add the sliced bell peppers and onions. Add 1 tablespoon of olive oil and 1 tablespoon of fajita seasoning.

  • Transfer the onions and peppers to the air fryer basket and cook for 3 minutes at 380°F.

  • Meanwhile, add shrimp to the bowl and pat dry with a paper towel. Season with the remaining olive oil and fajita seasoning.

  • When the 3 minutes are up, make space in the center of the fajita veggies in the air fryer basket. Add the seasoned shrimp to the center.

  • Air fry for 6 minutes at 380°F, flipping halfway through. Remove from the air fryer basket and serve immediately.

  • Assemble the fajitas over tortillas. Heat the tortilla and spread some avocado cilantro sauce. Top with shrimp fajitas, sprinkle some lime juice, and enjoy!

Notes

Shrimp: I used raw, thawed shrimp (uncooked and deveined). You can use tails on or off. The one-pound pack had about 20-24 shrimp. 
Leftovers: You can store these shrimp fajitas in the refrigerator for up to 3 days in an airtight container. To reheat, warm gently in the air fryer for 2–3 minutes or in a skillet over medium heat until heated through.
