How to Air Fry Zucchini?

  • Prep the zucchini: Trim the edges of the zucchini. Then cut into quarters lengthwise. Then lay the quarter’s flat side down and cut it into equal size pieces. (Note: You can also do other shapes such as round or semi-circle. Time varies depending on the size)

  • Season: Transfer to a large bowl. Add olive oil, garlic powder, Italian seasoning, freshly ground black pepper, and salt. Toss to coat the zucchini with the oil and spices.

Air Fryer Method

  • Preheat the air fryer to 400°F. Transfer seasoned zucchini to the air fryer basket. Air fry at 390F for 7-9 minutes till it looks nicely roasted and is cooked.

Cut Evenly: Cut the Zucchini into the same size pieces so it cooks evenly.

Do No Overfill: Don’t stuff the basket too full. Even though it could be tempting, you should resist loading the entire zucchini into the air fryer basket at once. Zucchini overcrowded in the air fryer basket can become mushy and not roast well on the edges. Cook the zucchini in multiple batches in a single layer based on the size of your air fryer for the best results.

Shake halfway through: Shake the vegetables halfway while the zucchini is cooking. This also ensures that all pieces get the same amount of exposure to the hot air circulating in the air fryer, which helps them cook evenly.

Storage Instructions

Refrigeration: Leftovers can be kept in the fridge for two to three days in an airtight container.

Freezing: I don’t think it’s a good idea to freeze leftover air-fried zucchini because it will get mushy and soggy as it freezes and thaws.

Reheating: I highly recommend reheating zucchini in the air fryer. It will help to get the original roasted texture. Air fry for 2-3 minutes at 350°F.
