I love to use the air fryer to roast vegetables. They can be made quickly and easily. Cooking in the oven takes a lot longer.

The interior of the zucchini is cooked to a soft consistency, while the skin is attractively browned.

This Air fryer zucchini recipe uses ingredients you probably already have. The simple blend of seasonings takes this plain vegetable to a whole new level of flavor.

Why I Love This No Breading Zucchini Recipe

  • The Air fryer makes it easy, and it only takes about 15 minutes.
  • Healthy, low in calories, and low in carbs
  • This is a great side dish or snack.
  • Seasoned just right and tasty

Ingredients

  • Zucchini: For this recipe, the fresher, the better. Choose small to medium-sized zucchini with smooth skin and a dark green color.
  • Olive oil: Stops the zucchini from burning while helping in crisping.
  • Seasoning: You’ll need garlic powder, Italian seasoning, salt, and black pepper.
  • Lemon juice: Don’t worry if you don’t like lemon; the citrus juice brings out the flavors and sweetness of the zucchini without making it taste too lemon-y.

How to Air Fry Zucchini?

  • Prep the zucchini: Trim the edges of the zucchini. Then cut into quarters lengthwise. Then lay the quarter’s flat side down and cut it into equal size pieces. (Note: You can also do other shapes such as round or semi-circle. Time varies depending on the size)

  • Roast for 15 to 20 minutes or until zucchini is golden brown around the edges.

Helpful Tips

Cut Evenly: Cut the Zucchini into the same size pieces so it cooks evenly.

Do No Overfill: Don’t stuff the basket too full. Even though it could be tempting, you should resist loading the entire zucchini into the air fryer basket at once. Zucchini overcrowded in the air fryer basket can become mushy and not roast well on the edges. Cook the zucchini in multiple batches in a single layer based on the size of your air fryer for the best results.

Shake halfway through: Shake the vegetables halfway while the zucchini is cooking. This also ensures that all pieces get the same amount of exposure to the hot air circulating in the air fryer, which helps them cook evenly.

What to Serve with Air Fryer Zucchini?

Roasted zucchini can be served in a lot of different ways. It makes a tasty side dish for any meat or poultry dish.

You can also eat it with your favorite dipping sauce as a snack or add them to your favorite pasta, such as penne pasta or pappardelle pesto.

We also love to grate parmesan cheese over the roasted zucchini, and it tastes heavenly!

Storage Instructions

Refrigeration: Leftovers can be kept in the fridge for two to three days in an airtight container.

Freezing: I don’t think it’s a good idea to freeze leftover air-fried zucchini because it will get mushy and soggy as it freezes and thaws.

Reheating: I highly recommend reheating zucchini in the air fryer. It will help to get the original roasted texture. Air fry for 2-3 minutes at 350°F.
